Roasting Times Fillet of Beef

Roasting any meat can be tricky and overcooked beef is tasteless, grey and unappetizing. The times below are based on an 800g piece of boneless fillet of beef and easily serves 4 though for medium, allow 20 minutes per 500g plus 10 minutes standing time.

Place the beef in a roasting tin, allow it to come to room temperature and season with a little salt and pepper; preheat the oven to 200 C.

  • Medium rare 25 minutes in the preheated oven
  • Medium 30 minutes in the preheated oven
  • Medium plus 35 minutes in the preheated oven

Remove from the oven, cover with foil and a clean cloth and allow the beef to rest for 10 minutes before serving.
