Grown in the coastal border region of Queensland and New South Wales, peak season during mid-winter, this tiny fruit with an aromatic smooth skin is deceptive; slice and enjoy waves of their powerful citrus aroma, flavour a combination of lemon & lime with herb-floral undertones. Finger limes are best used raw: simply cut into fine slices as a flavouring and / or garnish, skin and all are edible or, slice one end before gently squeezing to release caviar-like ‘pearls’, an attractive garnish to chilled drinks, seafood, grilled fish , chicken, salads and salsa’s. There are several varieties ranging from green to pink skinned that hide a pale rose pulp, the more mature the fruit, the darker the skin colour.
