It’s the weekend – well almost, and to celebrate we are going to the cinema to a late afternoon showing of The Iron Lady in the Champs Elysee and, not in the mood for a resteraunt, we can easily be home for supper.

I’m rather a sucker for condiments and flavourings so rooting around in my cupboard I find all sorts of pots and jars of interesting but forgotten ingredients. Fortuitously today, I spotted ready chopped, chipotle chillies, a perfect base to prepare a marinade for bavette steaks. Bavette is an economical, flavoursome cut of beef that most definitely benefits tenderizing prior to flash grilling or pan frying.



  • 100 ml olive oil
  • 50 ml red wine vinegar
  • Small bunch coriander, finely chopped
  • 2 tsp. pre-chopped chipotle chillies
  • 1 tsp. ground allspice
  • 1 tsp. ground ginger



Simply combine all the ingredients together and pour over the steaks, ensuring an even distribution. Leave for several hours, allowing the flavors to infuse and the meat be tenderized.


This quantity is sufficient for 6 steaks



All that’s left to be done is to prepare a salad and touch up my make up….
