A tub of roast tomato sauce, an opened packet of soft, wheat tortilla’s and a couple of balls of mozzarella cheese sat in the fridge… son engrossed in watching the Olympics from breakfast ‘til supper and the dog wants to be walked… a simple to prepare, quick to cook lunch is the solution…

Quick and Easy Margarita-Tortilla-Pizza

Preheat the oven to 200C and place as many tortilla’s as you require on baking sheets or pizza trays. Spread with a couple of tablespoons of tomato sauce, top with about ½ mozzarella cheese, roughly torn and scattered per pizza (or use grated cheese if you don’t happen to have this) and finish with a flutter of torn basil leave before baking in the hot oven for about 12- 15 minutes or until the cheese has browned. Serve immediately with lashings of freshly ground black pepper.
